The best meal of your trip can happen at your own table — how in-villa chefs work, what they cost and what to ask.

Ask returning Bali travellers about their best meal and a surprising number describe their own villa: a chef arriving with morning-market seafood, a barbecue smoking by the pool, and a bill smaller than the restaurant you skipped.

How villa chefs actually work

Three common formats: a live-in or daily cook at staffed luxury villas (you buy groceries, they cook anything); a chef-on-request arranged by the villa manager for specific nights; and independent private-chef services that travel to any villa. Most managed villas — including ours — run the second model: tell the manager what you're dreaming of and a chef appears with the ingredients.

What it costs

Expect roughly $10–25 per person for a multi-course Indonesian or barbecue dinner via villa-arranged cooks (plus groceries at market prices), and $40–100+ per person for high-end independent chefs doing Western tasting menus. Either way the comparison is friendly: a seafood barbecue for six at the villa usually undercuts the same table at a beach club by half, with no drive home.

The menu sweet spots

Ask for what Bali does best: whole grilled fish and prawns from the morning market, babi guling-style feasts (ordered ahead), nasi campur spreads, satay grilled over coconut charcoal, and tropical-fruit breakfasts. Chefs handle dietary needs well — vegan, gluten-free, kids' menus — if you flag them a day ahead. The floating breakfast, kitsch as it is, remains undefeated at sunrise.
